Start with Water and Scale
An ice machine cannot make ice without a steady supply of clean water, so that is the first thing to confirm. Check that the water supply valve to the machine is open, the inlet line is not kinked, and any dedicated water filter is not so clogged that flow has dropped. Then consider scale: mineral buildup on the evaporator insulates the surface that needs to be cold and narrows the water passages, so a scaled machine slowly makes less ice until it makes none. Running the descaling and sanitizing cycle resolves a surprising number of no-ice calls.

Air-Cooled Units and Heat
Air-cooled Scotsman units shed heat through a condenser, and if it is choked with dust or the vents are blocked, the machine overheats and shuts down to protect itself, so it stops making ice. Cleaning the condenser and clearing the vents restores production on those units. This is easy to overlook and easy to fix.
When It Is a Component
If the water supply is good, the machine is clean and descaled, and the condenser is clear, but it still will not make ice, the fault is usually a water-inlet valve that will not fill, a sensor that misreads the cycle, or a harvest component that will not release the ice. These need a technician to diagnose and replace with genuine OEM parts. Nugget-ice models in particular have a harvest mechanism that a specialist should assess.
